Wednesday Check-In + Pumpkin Bread




There it is, the most wonderful pumpkin bread in all the world. So healthy and sooooo yummy. Want the recipe? Okay, I'll give it to you because I want everyone to enjoy just how spectacular it is.

2 cups pureed pumpkin (I used a roasted sugar pumpkin)
2 eggs
3 egg whites
1 cup applesauce (I used treetop original just because it's what I had in the fridge)
3/4 tsp salt
1 cup sugar
2 1/2 tsp baking soda
3 cups whole wheat flour (you can do 2 cups wheat and 1 cup white if you prefer)

Then you can add raisins and/or walnuts if you like. I added both to half the recipe. 2oz of each.

Mix everything together adding the flour gradually as the last ingredient. Pour into whatever baking pans you prefer to use. Bake on 350F for 35-40 mins, depending on your oven. Mine tends to be relatively aggressive so I was pretty good to go by 35 mins, but I also made the mini loafs. Set it at 30, then check it every couple mins with a toothpick. When it comes out clean, you're ready.

This recipe makes two loafs of bread. As you can see in the pictures above, I made all mini loafs instead. I figured about 12 servings in all. Each mini loaf is 2 servings, so one serving is about the size of 2 muffins. Here's the nutritional info per serving.

Wednesday Check In
I did everything on my list except burn 400 calories and practice my guitar.

Just for the sake of full disclosure I also want to mention that I drank a bunch of water yesterday but I'm not positive if it was the full 60oz that I have listed. Not like it's a big deal but I want to make sure I'm honest with myself and everyone.

Spaghetti Thought
I live in Seattle and it's been windy and rainy and stormy for about a week straight. In well, all the years that I've lived here I've never found it as charming and lovely as I do this year. This is the view from my office window.


Doesn't it just beckon you to put your big rubber boots on and run outside with the gusto and excitement of a kid tugging at his parent's pant leg to hurry up and take him to play in the first snow of the year? After all, you do realize that kids wait all year for that first snow. I gaze out my window and see myself with my black and rainbow color poc-a-dot rubber boots and rain coat, arms out, face to the sky, eyes closed in blissful peace, dancing around in the beauty. Have you ever just let the rain fall on your face and bask in the sensation of it? If not, you should try, it's lovely. Side note here, confession of sorts, I absolutely love jumping in mud puddles. What do you think that means about me as a person?

It was mostly sunny and beautiful for almost 4 hours yesterday morning. I went down to Alki and walked for 8 miles! Listened to deep house when the sun was shining ... and then Underworld when it clouded up.

I was happy as a clam!
