I have to tell you about a recipe that I just made for dinner tonight. AMAZING! I found it in an old Women's Health Mag that I had. I tend to keep health and fitness magazines for a couple reasons: 1. Good healthy recipes for when I get stuck and out of ideas and 2. Good workout ideas when my workout gets stale.
So I pulled one of my mags out when I was doing my meal planning last week and found this.
WHITE BEAN AND CHICKEN CHILI
1 tbsp olive oil
2 scallions thinly sliced
1 clove garlic minced
3/4 tsp chili powder
1/2 tsp cumin
1 can white beans, rinsed clean (I used cannellini)
1/2 can diced tomatoes with the liquid
3/4 cup chicken broth (I used water and it still tasted amazing but saved a few calories)
3/4 cup (4-5oz) leftover cooked chicken breast meat only shredded or cubed in bite size pieces
Tabasco sauce to taste if you like it
Recipe serves 2 people
1. In a medium saucepan, heat oil on medium high. Add scallions (saving some for garnish) and garlic and saute until golden. Add chili powder and cumin. Saute for 1 minute. Add white beans, tomatoes, and broth. Simmer 15 minutes until liquid is slightly reduced. Stir in chicken and simmer 5 minutes more.
2. Season with Tabasco and garnish with scallions. If desired, serve with baked tortilla chips and low fat sour cream. For the baked tortilla chips, just cut tortillas into 8 pieces, sprinkle with a little sea salt, and bake until crispy (12-15 minutes on 350degrees).
I just ate it with a couple saltines and it was wonderful. Sorry, no picture. I ate it too fast and so did Hubby. Too good to let it sit and get cold.
If you make it according to directions exactly here is what the nutrition info says in the mag.
Per Serving: 480cal, 30 g protein, 59 g carb, 12 g fiber, 14 g fat, 2.5 g sat fat, 720 sodium
This week, I vowed to eat all my calories. Last two weeks I was doing the Jillian Michaels Master your Metabolism diet and it was fine and all but did tend to be a little low on calories. There were a couple days that I added them up to around 900. Yikes. Too low. So, now that I'm feeling confident and in a good space and doing my own meal planning, I'm making sure to get my 1,400 calories per day. I'm happy to report that today was a total success. One day down, rest of my life to go. :)
Other than that, I managed to do everything on my list...no wait. Not everything. No yoga today. But I did go to the gym and kicked my own butt for 1hr 45min. I did upper body weights for about half hour then went upstairs to cardio machines. Hit the elliptical for about 30 mins, then moved over to the treadmill for the rest of the time. 568 calories burned. Woop Woop!
