Jamaican Jerk Chicken Sweet Potato Chili

You have to know that I only ever post the best recipes that I find. I found another one. Well, I did my own thing with it and it turned out fabulous. This is my version.

Ingredients:
1 tbsp  extra virgin olive oil
2          boneless skinless chicken breasts
1/2 can black beans, rinsed and drained
2 cups  fresh spinach, chopped
1 can   diced tomatoes
2 cups sweet potatoes, peeled and chopped into bite size pieces
1         banana, sliced
1/2cup onion, chopped
1 cup  water or chicken stock if you prefer

Jerk Seasoning:
3/4 tsp   allspice, ground
3/4 tsp   sugar
3/4 tsp   cinnamon
1/2 tsp   red pepper flakes (use more or less depending on how spicy you like it; 1/2 tsp is very mild)
1/2 tbsp dried thyme (or two fresh sprigs)
1/2 tsp   sea salt

If you have a cast iron pot, it works great for this recipe. That's what I used. Or you can use a crock pot if you prefer long and low cooking.

First, you want to put a bit of oil in the bottom of your cast iron and get it nice and hot. Drop your two chicken breasts in there, just long enough to brown on both sides then take them out and let them rest (they will still be pink in the middle).

If you have excess oil left in the pot, no worries. Put the chopped onion in and cook for a couple minutes until softened, then add black beans, chopped spinach, diced tomatoes, sweet potatoes, banana, and chicken stock. Stir it to combine then cover and let it get happy on medium-low heat for a few minutes (15-20mins).

In the meantime, chop your two chicken breasts into bite size pieces and toss them in the Jerk Seasoning to coat.

After about 15 minutes of cast iron happiness, add the chicken and all the remaning Jerk Seasoning to the pot and stir to combine. Cover and let simmer on low heat for another 15-20 minutes.

If you prefer to use the crockpot, there's no need for any of this fancy shit, just chop everything up in bitesize pieces and toss it all in there, put the lid on, turn it on low heat and let it cook all day. Viola.
